Spinach & Cheese Crepes

     In my previous recipe, I showed you how to make nice and salty crepes from scratch. Today I am going to present to you spinach and cheese filling, which is my first suggestion for salty crepes. This is a basic spinach and cheese recipe, and you may certainly add any of your favorite veggies. I hope you enjoy my recipe.



Ingredients

- American cheese slices
- 1 bunch of spinach, chopped
- 1 onion, diced
- 1 red pepper, diced
- 2 tbsp soy sauce
- 3 tbsp olive oil
- Salt, pepper, ginger



Process

1 - In a hot pan, add olive oil, then onion. Cook for 2 to 3 min then add red pepper. Cook again for 2 to 3 min, then season with salt, pepper, and ginger.


2- Add soy sauce, stir, then add your spinach and cook for 3 to 4 min or until soft. Put the filling in a bowl and allow to cool before use.


3- In each crepe, place a slice of American cheese and 1 or 2 tbsp of your filling (depending on your crepe size.)


4- Fold your crepes into squares and place in a baking sheet lined with parchment paper.


5- In a preheated oven, cook your crepes for 7 to 10 min until the cheese is melted. Serve and enjoy!

Salty Crepes

     Today I am going to share with you my favorite recipe of salty crepes. Who doesn't love crepes? They are so soft and delicious.We like ordering a variety of crepes in restaurants, so why not try them at home?

     This is a basic crepe recipe and you may serve it with your favorite salty filling. However, I will share with you some of my favorite fillings in future posts.



Ingredients

- 225g flour 
- 2 eggs
- 1/2 l milk
-  4 tbsp vegetable oil
- salt and pepper



 Process

1- In a blender, mix all the ingredients together until smooth (you may also use an electric mixer or a food processor). Allow to rest for 10 to 15 min.

2- In a hot non-stick pan, use a ladle to pour enough quantity of the batter to cover the pan surface. Cook for 2 to 3 min then flip your crepe and cook again for 2 min.



Repeat the process until all batter is used.

Strawberry Muffins

    There is nothing better than strawberries and chocolate bakeries. As you may know, I love baking muffins. I always try new recipes and ideas. Well, I tell you, once I tried these sweet muffins, I couldn't stop baking them. This was my favorite spring recipe and everybody loved it. I hope you enjoy my recipe.



 Ingredients

Dry ingredients

- 2 cups flour
- 3/4 cup strawberries, diced
- 3/4 cup  chocolate chips

- 1/2 cup sugar
- 2 tsp Baking powder (or one bag of 7g)
- 1/2 Baking soda
- A pinch of salt

Wet ingredients

- 1/2 cup milk

- 1/2 cup yogurt
- 1/3 cup Vegetable oil (or melted butter)
- 1 Egg

- Vanilla extract or vanilla sugar (1 bag of 7g)

Process

1- Preheat your oven to 200°C and  and lay a muffin tray with paper muffin cases.
    In a small bowl, mix all the wet ingredients together.

2- In a mixing bowl, mix all the dry ingredients together. Make a hole in the mixture and pour the wet batter. Mix until combined. Be careful not to over mix.



3- Fill  muffin cases and bake for about 25  minutes. (cooking time may deffer so watch out)

Baked Fish and Rice

     Today's recipe is baked fish and rice. I cooked it many days ago and it turned out very delicious. I am planning to cook it again very soon . Even if it needs various ingredients, it is very easy to make. I love fish dishes and I always try new ideas and flavors. I hope you like this recipe.




Ingredients

Rice mixture

- 300g rice, boiled in salt water
- 3 tbsp vegetable oil
- 2 tbsp cornichon, sliced
- 2 tbsp preserved lemon, diced
- 3 tbsp tomato sauce
- 1 tbsp tomato paste
- 1 tbsp hot sauce (optional)
- 1 or 2 tbsp lemon juice
- 1 tsp dry garlic
- 1 tbsp paprika
- Salt, cumin, and pepper


Other ingredients

- 2  medium size fish of your preference
- 2 to 3 tomatoes, sliced 
- 1 red pepper, sliced
- 1 green pepper, sliced
- 100g canned mushroom
- 1 tbsp parsley, chopped 
- Salt, cumin, and pepper
- 1 tbsp vegetable oil

 

Process

1- Preheat your oven to 250°C . 
To prepare the rice mixture, toss all the ingredients together and set aside.

2- In a baking dish, place tomatoes, red pepper, green pepper, then season with salt, pepper, and cumin. Add vegetable oil.

3- Season your fish and fill it with rice mixture. Place in the dish.


4- Add the remaining rice, then decorate with mushroom and parsley. 


 5- Bake for 30 to 45 min.
