Moroccan Inspired Muffins

Moroccan brioche or "Krashel" are one of my favorite Moroccan bakeries. They remind me of childhood and my grand parents home. The original recipe may take some time, as the raising time is relatively long. I thought I could get inspired from the original recipe and take the Moroccan brioche to another new level. So I decided to mix the traditional muffins recipe with Moroccan brioche basic ingredients and come with muffins "à la marocaine"; the result was really amazing. I loved them, my family loved them, and we all agreed that these muffins have the same taste and almost the same texture of Moroccan "Krashel"! This recipe has become one of my favorites. I hope you will try it out and enjoy the great Moroccan aromas of orange flower water, sesame, and fennel seeds.

Ingredients

- 2 cups sifter flour
- 3 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/3 cup melted butter
- 3 tbsp orange flower water
- 1 beaten egg
- 1 tbsp sesame seeds
- 1 tbsp fennel seeds


Process

1- Preheat your oven to 200°C and  and lay a muffin tray with paper muffin cases.
    In a small bowl, mix all the wet ingredients together.

2- In a mixing bowl, mix all the dry ingredients together. Make a hole in the mixture and pour the wet batter. Mix until combined. Be careful not to over mix.


3- Fill  muffin cases and bake for about 25  minutes. (cooking time may deffer so watch out)

Strawberry Muffins

    There is nothing better than strawberries and chocolate bakeries. As you may know, I love baking muffins. I always try new recipes and ideas. Well, I tell you, once I tried these sweet muffins, I couldn't stop baking them. This was my favorite spring recipe and everybody loved it. I hope you enjoy my recipe.



 Ingredients

Dry ingredients

- 2 cups flour
- 3/4 cup strawberries, diced
- 3/4 cup  chocolate chips

- 1/2 cup sugar
- 2 tsp Baking powder (or one bag of 7g)
- 1/2 Baking soda
- A pinch of salt

Wet ingredients

- 1/2 cup milk

- 1/2 cup yogurt
- 1/3 cup Vegetable oil (or melted butter)
- 1 Egg

- Vanilla extract or vanilla sugar (1 bag of 7g)

Process

1- Preheat your oven to 200°C and  and lay a muffin tray with paper muffin cases.
    In a small bowl, mix all the wet ingredients together.

2- In a mixing bowl, mix all the dry ingredients together. Make a hole in the mixture and pour the wet batter. Mix until combined. Be careful not to over mix.



3- Fill  muffin cases and bake for about 25  minutes. (cooking time may deffer so watch out)

Orange Chocolate Muffins

     My mother loves orange bakeries, so one day I decided to try orange chocolate muffins recipe for her. It turned out great! From that day on, this recipe has become one of my favorites. There is no reason to not fall in love with these muffins. With chocolate sweetness melted in orange freshness, their taste would not be any better. I love this recipe, it is super easy and still very delicious.



Ingredients



1- Dry ingredients

- 2 cup flour
- 1/3 cup sugar
- 2/3 cup chocolate, cut into small pieces (semi sweet preferred)
- 2 tsp Baking powder
- 1/2 Baking soda
- A pinch of salt 


  2- Wet ingredients

-  1 cup Orange juice. 

- 1/3 cup Vegetable oil or melted butter
- 1 Egg 
- 1 tsp Vanilla extract
- 1 tbsp orange zest



 Process

1- Preheat your oven to 180°C and  and lay a muffin tray with paper muffin cases.
    In a mixing bowl, mix all the dry ingredients together and set aside.


2- In a separate bowl, add all the wet ingredients and mix well. 

3- Make a hole in the dry ingredients mixture and pour the wet batter. Mix until 
    combined. Be careful not to over mix.



 4- Fill  muffin cases and bake for about 30 minutes.

Cheese & Turkey Ham Muffins

     If you are tired of sweet muffins recipes, why don't you try a salty one? I made these great muffins last week and they turned so delicious! So I decided to bake them again and post the recipe in my blog. We all know that cheese and smoked turkey ham is a superb combination. What if we add red pepper and rosemary? I let you discover yourselves!


Ingredients

Dry ingredients

- 2 cup flour
- 1/2 cup smoked turkey ham, diced
- 1/2 cup red pepper, diced
- 1/2 cup cheese, diced
- 1 tbsp fresh rosemary leaves  
- 2 tsp Baking powder
- 1/2 Baking soda
- Salt and pepper

Wet ingredients

- 1 cup Milk
- 1/3 cup Vegetable oil (or melted butter)
- 1 Egg

Chocolate Muffins

     Chocolate again? Yes, you know it's my favorite! Today I am sharing with you my favorite chocolate muffins. Actually, they are addictive. Once you try them, you will always crave them. Believe me, I've been there. They are light, fluffy, and super delicious. Well, they are perfect!


Ingredients

1- Dry ingredients

- 1 + 3/4 cup Flour
- 3/4 cup Sugar
- 1/2 cup Chocolate, cut into small pieces (semi sweet preferred)
- 2 tbsp cocoa power (unsweetened) 
- 2 tsp Baking powder
- 1/2 Baking soda
- A pinch of salt



2- Wet ingredients

-  3/4 cup Milk
- 1/3 cup Vegetable oil
- 2 tbsp Yogurt
- 1 Egg
- 1 tsp Vanilla extract
- 1 tsp Instant coffee dissolved in 1 tbsp warm water 



Process

1- Preheat your oven to 180°C and  and lay a muffin tray with paper muffin cases.
    In a mixing bowl, mix all the dry ingredients together and set aside.

2- In a separate bowl, add all the wet ingredients and mix well. 

3- Make a hole in the dry ingredients mixture and pour the wet batter. Mix until 
    combined. Be careful not to over mix.



4- Fill  muffin cases and bake for about 30 minutes.

Banana and Chocolate Chips Muffins



      Muffins, muffins, muffins… I love muffins! I bake them a lot, almost every week. I like always  to try new recipes and new flavors. However, there are always some favorites. Mine are chocolate muffins, and my husband’s are banana muffins. So, I came with the idea of combining the two. Why not? Banana goes perfect with chocolate. The result was great. Have a look:




Ingredients 


- 2 cups of all purpose flour
- 2 tsp of baking powder
- ½ tsp of salt
- 1 tsp of cinnamon
- 1 tsp of vanilla extract
- 2/3 cup of banana puree
- 1 cup of chocolate chips

- 2/3 cup of whole milk
- ½ cup of sugar
- ½ cup of brown sugar

- ½ cup of vegetable oil
- 2 Eggs


For the Topping


- 2 Tbsp creme fraiche or sour cream
- 4 Tbsp black chocolate

 Process

1-  Preheat your oven to 180°C and lay a muffin tray with paper muffin cases. grease the edges so nothing would stick.



2-  Mix the dry ingredients: flour, baking powder, cinnamon, and salt.

3-  In a separate bowl, take 1 Tbsp of the mixture and add it to the chocolate chips and mix them so you can prevent them from sinking in the muffins. 




4-  Now, mix the remaining ingredients: eggs, sugar, brown sugar, milk, vanilla extract, banana puree, and oil.

5-  Slowly add the dry ingredients while folding the mixture. Then, add the chocolate chips and fold again until combined. Be careful not to over mix.



6-  Fill  muffin cases and bake for about 20 to 25 minutes, or until tops are lightly browned.





7-  Remove muffins from pan and allow them to cool for some minutes so you can handle them.
8-  Prepare the topping: In bain-marie, melt the chocolate and add the crème fraiche. Mix until you get a smooth texture.  

9-  Top them with chocolate in any form you like.
