Fish Stew

If you have some fish in your freezer and you haven't decided on the recipe yet, here is a good one; fish stew. It is one of the healthiest ways to cook fish, and it is very delicious. Actually, this recipe is inspired from the Turkish cuisine and it is worth trying out. 

I cooked this stew a while ago and my family loved it. If you are not a fish lover, this recipe may change your mind! I hope you enjoy it.



Ingredients

- 500g white meat fish.
-  3 tomatoes, diced.
- 1 red bell pepper, diced.
- 4 to 5 gloves of garlic, cut.
- 2 tbsp vegetarian oil.
- 3 tbsp olive oil.
- 1 tbsp cedar vinegar.
- Parsley, thyme, and rosemary.
- Salt, pepper, cumin, and paprika.



Process

1- In a hot pan, heat the vegetarian oil. Add garlic, cook until aromatic then add red bell pepper. Season with salt and pepper, and cook again for 2 min.



2- Add tomatoes and cedar vinegar and cook for about 10 min. Add paprika while cooking and add cumin after you turn the heat off.



3- In an oven dish. pour the sauce and place your fish portions on top of it. Garnish with herbs, season with salt and pepper and add your olive oil. Cook in the preheated oven for 15 to 20 min. (cooking time may differ so watch out)



Serve warm and enjoy your meal!

Baked Fish and Rice

     Today's recipe is baked fish and rice. I cooked it many days ago and it turned out very delicious. I am planning to cook it again very soon . Even if it needs various ingredients, it is very easy to make. I love fish dishes and I always try new ideas and flavors. I hope you like this recipe.




Ingredients

Rice mixture

- 300g rice, boiled in salt water
- 3 tbsp vegetable oil
- 2 tbsp cornichon, sliced
- 2 tbsp preserved lemon, diced
- 3 tbsp tomato sauce
- 1 tbsp tomato paste
- 1 tbsp hot sauce (optional)
- 1 or 2 tbsp lemon juice
- 1 tsp dry garlic
- 1 tbsp paprika
- Salt, cumin, and pepper


Other ingredients

- 2  medium size fish of your preference
- 2 to 3 tomatoes, sliced 
- 1 red pepper, sliced
- 1 green pepper, sliced
- 100g canned mushroom
- 1 tbsp parsley, chopped 
- Salt, cumin, and pepper
- 1 tbsp vegetable oil

 

Process

1- Preheat your oven to 250°C . 
To prepare the rice mixture, toss all the ingredients together and set aside.

2- In a baking dish, place tomatoes, red pepper, green pepper, then season with salt, pepper, and cumin. Add vegetable oil.

3- Season your fish and fill it with rice mixture. Place in the dish.


4- Add the remaining rice, then decorate with mushroom and parsley. 


 5- Bake for 30 to 45 min.

Moroccan Fish Tajin

     It's a new day, it's a new month, and it's a new recipe! 

     I want to share with you a famous Moroccan recipe; Fish Tajin. Actually, there are a lot of seaside areas in Morocco where you may find Fish tajin restaurants. So, a lot of people may have heard about it. It's delicious, spicy, and healthy. You may use almost any type of fish in this recipe. Personally, I prefer white fish. However, there are a lot of Moroccans who favor oily fish, such as sardines, to prepare their tajins.

     Besides, I am presenting the Moroccan Chermoula, which is a marinade used mainly with fish recipes, but it may be used in some other recipes as well. I hope you enjoy my recipe!




Ingredients

Chermoula

- 7 to 10 gloves Garlic
- A small bunch of Parsley and Coriander
- 3 tbsp vegetable oil
- 2 tbsp vinegar
- Salt, cumin, and a tbsp of paprika.


Tajin

- 1 or 2 medium size fish of your preference
- 2 potatoes, sliced
- 1 big tomato, sliced
- 1 green pepper, sliced
- 1 hot perpper
- 2 to 3 lemon slices
- Chermoula (already prepared)
- Additional seasonings: salt, cumin, paprika and some oil if needed.
- 1/2 cup Water

Process

1- To prepare your Chermoula: Except oil and vinegar, process all the other ingredients in a food processor, or blend with a hand blender until smooth. Add oil and vinegar and mix with a spoon.



2- In a separate bowl, use half of your Chermola to coat the fish.
3- In a tajin, layer potatoes slices, coated fish, tomatoes, pepper, then place the hot pepper and lemon slices on top.


4- Add water to the remaining marinade, add additional seasonings and oil if needed, then pour over the tajin. Cook for 30 to 45 min on low heat.

Grilled Sole Fish

     I love my grill pan and I love fish. What about a grilled fish meal? It's fabulous! 
So, I am sharing with you a recipe of grilled sole fish which is perfect for a grill pan; it's flat and thin. This recipe is easy and fast, you can make it in no time. You may serve it with a salad of your choice or some pasta. Enjoy!

Ingredients

- 500g Sole fish
- 1 Tsp Garlic, finely minced
- 1 Tbsp Parsley, finely chopped
- 2 Tbsp Vegetarian oil
- 1 to 2 Tbsp Lemon juice
- Salt and Pepper





 Process

1- In a bowl, mix all the ingredients and set aside for at least 15 minutes.


2- Preheat your grill pan 5 minutes before you start placing your fish. Preferably, grease the pan slightly with some additional oil.


3- Place the fish and grill on each side on low heat until it's done.
    Decorate with fresh parsley and lemon slices and that's it!
