Moroccan Fava Beans

     It's fava beans season, so I thought of posting this delicious recipe today. It is one of my favorite Moroccan side dishes. It is always better to use fresh beans, but you may also use frozen ones. In this recipe, I like to use garlic and some chopped onions, but a lot of Moroccans use only garlic. However, it is delicious both ways, so you may try my recipe as presented or just omit onions! I hope you like this recipe.




Ingredients

- 500g fava beans
- 2 tomatoes, crushed
- 1 small onion, crushed
- 3 tbsp parsley and coriander, finely chopped
- 1 tbsp garlic, crushed
- 1 quarter preserved lemon
- 2 tbsp olive oil
- 2 tbsp vegetarian oil
- 1 hot pepper
- Salt, paprika, and a pinch of cumin
- 1 cup water




Process

1- In a hot pan, or a pressure cooker, add all ingredients except fava beans and water. Cook for 2 to 5 minutes on low heat.


2-  Add water and fava beans if you are using fresh beans. Add water and bring to a boil then add fava beans if you are using frozen beans. Cook covered for 10 min if using a pressure cooker, 20 to 30 min if using a regular pan. Simmer until water evaporates. Served warm.

Beef fillet

     This is good recipe to cook your beef fillet while adding some changes to the usual salt and pepper seasonings. I love beef fillet, it's easy to cook and very delicious to eat. This recipe is my favorite and I can't wait to share it with you. I hope you like it!


Ingredients

- 500g beef fillet
- 3 tbsp parsley, finely chopped
- 5 gloves of garlic, crushed
- 4 to 5 tbsp vegetable oil
- 1/2 cup water
- Salt, pepper, and paprika



Process

1- In a bowl, mix all the ingredients together, except water. Allow to rest for 15 min. 



 2- In a hot saucepan, place your fillet and cook each side for 2 to 3 minutes. Add water and cook again for 15 to 20 min on low heat. 





*cooking time may deffer so taste your fillet and add water again if you need additional cooking time.

It's done!

Strawberry Yogurt Dessert

     I love strawberry season. For me, it comes with a non stop dessert ideas. Whether with orange juice or vanilla yogurt, fresh strawberries dessert is always a nice treat to serve to your family and friends. Today's recipe is strawberry yogurt dessert. It's very easy to make and very delicious to eat!


Ingredients

- 300g fresh strawberries, cut.
- 2 small bananas, sliced
- 200g vanilla yogurt
- 100g crackers
- 3 tbsp pine nuts, toasted
- 3 tbsp walnuts
- 3 tbsp raisins 
- 2 tbsp sugar


Process

1- In a bowl, toss all the ingredients together. 


2- Cover with plastic wrap. Refrigerate for 30 min then serve.

Mushroom Rice

     If you are among those who don't like rice, you may want to try this recipe because it may change your mind. It is very delicious and very easy. I love to have it in my menu as a gourmet side dish. It consists mainly of onions, mushrooms, and soy sauce. Furthermore, I prefer to use Kikkoman soy sauce in this recipe. It adds such a nice flavor. However, sometimes I add a few drops of strong soy sauce to enhance color, and flavor as well.

Ingredients

- 300g rice, boiled in salt water
- 2 onions, diced
- 1 cup canned mushroom
- 1/2 cup black mushroom, soaked in hot water, washed, and chopped
- 1 tbsp garlic, finely chopped
- 3 tbsp soy sauce
- 5 tbsp vegetable oil
- Salt, pepper, and ginger. 


Process

1- Heat a pan for 2 min then add the oil, heat again for 1 more minute then add your garlic and onion. Season with salt and pepper and cook until brown. Stir occasionally.

2- Add mushrooms and cook again for 5 min. Stir occasionally.



3- Add rice, soy sauce, and season with salt, pepper, and ginger. Toss well and cook again for some minutes. 





This time, I served my mushroom rice with herb-scented turkey breast. (same recipe as Herb-Scented Chicken Fillet)

Orange Chocolate Muffins

     My mother loves orange bakeries, so one day I decided to try orange chocolate muffins recipe for her. It turned out great! From that day on, this recipe has become one of my favorites. There is no reason to not fall in love with these muffins. With chocolate sweetness melted in orange freshness, their taste would not be any better. I love this recipe, it is super easy and still very delicious.



Ingredients



1- Dry ingredients

- 2 cup flour
- 1/3 cup sugar
- 2/3 cup chocolate, cut into small pieces (semi sweet preferred)
- 2 tsp Baking powder
- 1/2 Baking soda
- A pinch of salt 


  2- Wet ingredients

-  1 cup Orange juice. 

- 1/3 cup Vegetable oil or melted butter
- 1 Egg 
- 1 tsp Vanilla extract
- 1 tbsp orange zest



 Process

1- Preheat your oven to 180°C and  and lay a muffin tray with paper muffin cases.
    In a mixing bowl, mix all the dry ingredients together and set aside.


2- In a separate bowl, add all the wet ingredients and mix well. 

3- Make a hole in the dry ingredients mixture and pour the wet batter. Mix until 
    combined. Be careful not to over mix.



 4- Fill  muffin cases and bake for about 30 minutes.

Moroccan Fish Tajin

     It's a new day, it's a new month, and it's a new recipe! 

     I want to share with you a famous Moroccan recipe; Fish Tajin. Actually, there are a lot of seaside areas in Morocco where you may find Fish tajin restaurants. So, a lot of people may have heard about it. It's delicious, spicy, and healthy. You may use almost any type of fish in this recipe. Personally, I prefer white fish. However, there are a lot of Moroccans who favor oily fish, such as sardines, to prepare their tajins.

     Besides, I am presenting the Moroccan Chermoula, which is a marinade used mainly with fish recipes, but it may be used in some other recipes as well. I hope you enjoy my recipe!




Ingredients

Chermoula

- 7 to 10 gloves Garlic
- A small bunch of Parsley and Coriander
- 3 tbsp vegetable oil
- 2 tbsp vinegar
- Salt, cumin, and a tbsp of paprika.


Tajin

- 1 or 2 medium size fish of your preference
- 2 potatoes, sliced
- 1 big tomato, sliced
- 1 green pepper, sliced
- 1 hot perpper
- 2 to 3 lemon slices
- Chermoula (already prepared)
- Additional seasonings: salt, cumin, paprika and some oil if needed.
- 1/2 cup Water

Process

1- To prepare your Chermoula: Except oil and vinegar, process all the other ingredients in a food processor, or blend with a hand blender until smooth. Add oil and vinegar and mix with a spoon.



2- In a separate bowl, use half of your Chermola to coat the fish.
3- In a tajin, layer potatoes slices, coated fish, tomatoes, pepper, then place the hot pepper and lemon slices on top.


4- Add water to the remaining marinade, add additional seasonings and oil if needed, then pour over the tajin. Cook for 30 to 45 min on low heat.
